Gingerbread recipe

  • 250g unsalted butter
  • 200g dark muscovado sugar
  • 7 tbsp golden syrup
  • 300g plain flour
  • 300g self raising flour
  • 2 tsp bicarbonate of soda
  • 4 tsp ground ginger  
    This recipe makes over 25 biscuits so you may want to half the ingredients to make less!

 

  1. Heat oven to 200C/fan 180C/gas 6. Melt the butter, sugar and syrup in a pan. Mix the flour, bicarbonate of soda and ground ginger into a large bowl, then stir in the butter mixture to make a stiff dough. If it won't quite come together, add a tiny splash of water.
  2. Roll the dough to a thickness of about 8mm and cut out the biscuits, using any cutter shape that you like.  I used a mixture of gingerbread men and round biscuit shapes.
  3. Put the biscuits onto a non-stick baking sheet, and repeat with remaining dough, re-rolling the trimmings, and cutting out until you've filled the tray.  Leave about 2cm between biscuits to allow for any spreading during baking.
  4. Bake in the oven for about 10 minutes, but check them after 8 as they can cook pretty quickly!  Cool the finished biscuits on a cooling rack, then decorate using tubes of coloured icing if desired.
